Coming late to the iPhone version of the rolling shutter meme, my favorite video was not the guitar string oscillation but the one on airplane propellers from DP Review, iPhone video enhanced by rolling shutter effect (via Adam Wilt, h/t to Reddit). This one comes from Jason Beutal, who explains it in detail on his blog in Image Aliasing of Plane Propellers in Photos and Video:
Andrew Davidhazy of RIT looked at the same stuff in The focal plane shutter artifact in certain digital cameras.
